At this point during cooking we have an internal temperature of 165F, I'm going to foil these butts and finish them to 195F. They'll rest in the foil in a cooler for an addition 45 minutes before pulling and seasoning. Cooking temperature for the first 3 hrs was 350F than after they were foiled I backed it down to 300F to finish, about a total of 7 hrs from start to finish. Seasoned with salt & pepper and cider vinegar. Cook with Love!
